MEXICO ORGANIC ALTURA is sourced from the southern states of Chiapas and Oaxaca, Mexico, where there are mountain ranges that provide higher altitudes and ideal climates for cultivating coffee. The vast majority of farms are family-owned with less than 10 acres of land. The coffee harvest typically begins in October and ends in March. During the decaffeination process, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The beans are then introduced to a solution concentrated with coffee solubles that extract the caffeine without extracting the coffee’s particular flavor.
